Today's coffee, Day 9 of Advent, is a delicate floral coffee roasted by Dear Green coffee roasters.

Established in 2011, Dear Green Coffee Roasters is a coffee roaster and supplier of exclusively 'speciality' grade coffee beans.
Taking their name from their home city of Glasgow, known as ‘The Dear Green Place.'
Their roastery and showroom is located in central Glasgow, just a stone's throw away from the legendary music venue and marketplace, the Barrowlands.

12g (Coffee) - 200g (Water) - 4 Pours - 2.5-3 Minute Brew Time
Grind Fine (2.2 on the Made by Knock Aergrind)
Add 12g of coffee to the brewer.
Heat your water to 96 degrees
Bloom with 50g, leave for 30 seconds.
Add water in 50g increments every 30 seconds until you reach 200g.
Leave to draw down. Your total brew time should be between 2.5-3 minutes.
For Aeropress
Use 17g of coffee to 230ml of Water Grind size medium Inverted position How to Brew Invert the brewer. Add the coffee to the brewer. Use 50ml to bloom and then add the rest of the water. Brew for 4 minutes. At 4 minutes, flip the brewer and press into your serving vessel.
