Peach, strawberry, and mango with jasmine florals and a juicy sweet caramel and milk chocolate finish

Roaster's note:

All of these farmers are trained in agronomy and post-harvest practices by the "King of Guji", Ture Waji, who is also managing the dry mills in the area. Here lots are tagged and separated and recorded with the start date of drying. Moisture content changes are recorded daily to ensure even and effective drying, in turn ensuring the long-term quality of the lots."

Filter recommended recipe:

Vessel: V60
Water ppm: 130-150 ppm
Water temperature: 93C
Coffee dose: 15 gr
Water dose: 270 ml
Total contact time: 2 minutes 20 seconds.

Technique: 50 ml bloom, followed by two equal pours of 110 ml each.


Espresso recommended recipe:

Coffee: 15 grams
Yield: 45 grams
Contact time: 30-33 seconds
Bar pressure: 6 bars
Water temperature: 93C "Danisa is the name of a sub kebele (small area within a larger municipality) from which the group of 37 farmers that contributed to this lot are located. Each farmer owns on average a plot of around 3 hectares. In this area, coffee grows under a natural shade canopy of forest, as is common for Guji coffee. This fertile and nutrient rich land consists of clay and loam.
