Bailies Coffee, Belfast – Nota Signature Blend

We’re kicking things off in Belfast with our friends at Bailies Coffee Roasters. These guys aren’t just roasting coffee they’re crafting flavour experiences while staying committed to ethical sourcing and long-term farmer partnerships. Bailies coffee has quickly become one of our fave roasters and we are excited to feature this high quality blend. 

What’s inside the bag?

• Origin blend: Brazil (50%), El Salvador (30%), Ethiopia (20%)

• Roast: Medium

• Tasting notes: Milk chocolate, caramel, peanut

• Altitude: 1,500–1,700 masl

The result? A rich, smooth, balanced brew that’s like a warm hug in a mug. Think sweet caramel layers, chocolatey comfort, and just a hint of nuttiness. Perfect for those slower, cosy October mornings.

Crosby Coffee, Liverpool – Uganda African Moon

Next stop: Liverpool! Crosby Coffee brings pure Scouse energy into every roast. Bold, fearless, and full of character, their African Moon coffee is grown by smallholders in Uganda’s Rwenzori Mountains - the same region supported by our Friendly Coffee Fund (yep, every sip helps put kids in school 💛).

What’s inside the bag?

• Origin: Uganda

• Roast: Medium / Medium Dark

• Tasting notes: Dried fruits, sweet dates, spice

• Altitude: 1,800–2,000 masl

This naturally processed gem bursts with fruity sweetness, warming spice, and a depth that feels perfect for autumn evenings.

💡 Roaster’s Brew Tips

Want to get the most out of your October coffees? Jack, founder of Crosby Coffee, has shared his pro tips:

• Espresso: 18g in, 40g out, 30 seconds — syrupy sweet shots every time.

• AeroPress: Use the inverted method for bolder flavour. Bonus tip: swap paper for a metal filter if you want extra body.

• Pour-over (V60): Bloom with 40g water, pour in circles, brew for ~2:50. Don’t use boiling water (unless you like burnt beans 🤢).

• French Press: 60g per litre, steep 4 minutes, skim the top before plunging. Simple, rich, and satisfying.

🚫 Decaf Picks That Don’t Compromise

Not feeling the buzz? Don’t worry, we’ve got you. This month’s decafs are full of flavour:

• Bailies Coffee, Colombia Santander – Toffee, blackberry, almond (Mountain Water decaf process).

• Crosby Coffee, Colombia Planadas – Biscoff, hazelnut, brown sugar (Sugarcane decaf process).
