Today's coffee, Day 5 of Advent, is a Bukonzo Dream from Uganda roasted by Murmuration coffee roasters.

Our good friend Dom launched Murmuration Coffee earlier this year with the ethos of celebrating unity and friendship in the natural world. Dom is passionate about sharing the hard work the farmers put into each and every coffee, and uses his expertise to draw out the natural sweetness of the coffee.

Roaster's note:
The name ‘Bukonzo Dream’ originated from the Bukonzo tribe people of Uganda. Holding brave and friendly traits they warmly welcome people who dream of being able to provide better opportunities for each generation. In turn, the farmers have strong entrepreneurial spirits and are always willing to go above and beyond to ensure a fantastic crop.
Bukonzo Dream is a fantastic lot from the Kasinga Coffee Station, collected by a total of 398 farmers. The coffee is harvested by hand with each farmer carefully selecting only the most perfect ripe cherries. These are then pre-sorted before being floated in a tank of water. Those that float are removed, only the best to be sun-dried on raised beds in purpose-built polytunnels.

Filter
17g coffee, 275ml water. Total brew time = 3:00-3:30.
Cafetière / French Press
1:17 ratio. Steep for 1 minute, mix, and steep for a further 4-5 minutes and left to settle.
