Day 18: Mexico – Advent Calendar Reveal

Altitude: 1,200-1,900 masl
Tasting notes: Toasted almonds, Caramel, Tangerine
Why Alice and Ben love it: Coffee from Chiapas in Mexico is among the most celebrated in Latin America. It is rich, smooth, and grown with care in the Sierra Madre de Chiapas mountains. The region’s volcanic soil, cool misty mornings, and lush forests the perfect environment for cultivating top-quality Arabica coffee that is full of chocolatey sweetness and citrus brightness.
This coffee is Fair Trade certified and comes from a farming cooperative formed by six producer groups in the area. In 2016, these smallholder farmers proudly exported their first Fair Trade certified harvest - this was a major milestone for southern Chiapas. Each farmer handpicks ripe cherries, processes them on small wet mills, and sun-dries the beans, ensuring consistent, high-quality flavour in every cup.
☕ Fun fact: Mexico was one of the first countries in the world to grow coffee organically, and Chiapas remains a leader in shade-grown, eco-friendly farming! Farmers often grow beans and corn alongside coffee, which helps preserve biodiversity and support their families.
